Strawberry & Chocolate Cream Pie

Bang, bang, bang. Diet, health, and will to resist. Bring on the heavy whipping cream, cream cheese, and powdered sugared oh so good, but bad for you goodness. Say hello to three layers of sweetness.

This is a relatively easy recipe and requires minimal baking, though some kitchen gadgets would come in handy.

Strawberry & Chocolate Cream Pie

Ingredients

(Crust)
¼ cup sugar
1 ¼ cup finely crushed graham crackers (I used 1 ½ packets of the 3 packets that come a box)
½ cup butter, melted
(Strawberry layer)
1 (8oz) package of strawberry cream cheese, softened (room temperature)
2/3 cup powdered sugar
1 1/3 cup heavy whipping cream
(Chocolate layer)
½ (8oz) package of chocolate cream cheese, softened (room temperature)
1/3 cup powdered sugar
2/3 cup heavy whipping cream

Directions

  1. Preheat oven to 375°F. In a bowl mix together sugar and crushed graham crackers. Add butter and mix well. Spread evenly into a 9 inch springform pan.
  2. Bake at 375°F for 4-5 minutes or until the edge is slightly browned. Place on a wire rack to cool before filling. (I popped mine in the fridge after cooling slightly.)
  3. With an electric beater, beat whipping cream until soft peaks form. Set aside.
  4. Give the strawberry cream cheese a quick whisk with the electric beater. Add powdered sugar and beat until well mixed.
  5. Fold about 1/3 of the whipped cream into the cream cheese mixture. Fold in the remaining whipped cream. Fill cooled graham cracker crust.
  6. Cover and chill for 1 hour. 5-10 minutes before the first layer is ready prepare the second layer.
  7. With an electric beater, beat whipping cream until soft peaks form. Set aside.
  8. Give the chocolate cream cheese a quick whisk with the electric beater. Add powdered sugar and beat until well mixed.
  9. Fold about 1/3 of the whipped cream into the cream cheese mixture with a spatula. Fold in the remaining whipped cream. Carefully spread the mixture on top of the first layer.
  10.  Cover and chill for 2 hours or until set.
Tips & More

Crushing graham crackers: I recommend using a blender or food processor to crush the graham crackers, easier than putting them in a bag and crushing away.

What is a springform pan? It’s a two piece pan that has sides that can be removed, leaving the base. There is an interlocking band on the side that allows you to tighten and loosening the sides, allowing you to remove the sides from and placing the sides on the base.

Folding. Folding is used when combining a lighter mixture into a thicker mixture. Folding is important in keeping the light texture or the air bubbles in the lighter mixture. Always add the lighter mixture into the thicker mixture, not the other way around. (Video)

Alternative flavors – peanut butter
Ingredients
1 (8oz) package cream cheese, softened (room temperature)
¾ cup peanut butter
Directions
Same directions as above, except mix the cream cheese and peanut butter together before adding the powdered sugar.

You can also use Nutella or other spread instead of peanut butter.

This cream pie also freezes well. I sometimes like to eat it straight from the freezer. Happy indulging!
